What is Microgreens Crop Planning?

Microgreens crop planning is the practice of calculating and organizing your crop production to meet your Order needs. It also involves only simple math. Let’s take a look at some crop planning principles, starting with some basic terms.

Seeds: Pathogen tested seeds used to grow microgreens crops.

Soaking: The process of soaking seeds in water (and/or sanitizer) to induce germination and start the microgreens crop growing cycle. Not all crops seeds need to be soaked.

Soak Time: The recommended time a seed should soak before sowing.

Sowing: The process of placing seeds on a growth medium at the start of the microgreens growing process.

Growing Medium: The medium your crop grows on and roots into – often soil, fibre mat, or hydroponics.

Trays: Plastic or metal trays for hooding growing medium and crops.

Germination: The first step of the growing process where the seeds are usually kept covered and in the dark.

Uncover: To uncover a crop in the germination stage and expose it to light 

Days to Maturity: The number of days it takes crop to be harvest ready from soaking or sowing.

Days to Germinate: The number of days, from soaking or sowing, a crop spends in the germination stage.

Sowing Rate: The amount of seed required for your tray size.

Expected Yield: The expected weight of crop you can expect from a given tray.

Product: The form of a crop that is sold to your customers, either cut and packaged or in live form.

  • As a note: you grow a crop and you sell a product.

Blend: A product made up of multiple crops. It is important to allocate a percent of each crop in the product for accurate crop planning.

Size: The label given to different sizes of a product (e.g., small, medium, or large).

Weight: The weight of a product associated with a given size.

Price: The amount you charge customer’s for your products.

Other Crop Planning Terms

Customer: The business or person you are selling your products to. 

Customer Type: A term used to categorize the type of customers you have, such as restaurants, grocers, or farmers markets.

Order: The products (including quantity, size, and price) a customer requests for a specific date.

Standing Order: An order that repeats on a regular schedule, often weekly or bi-weekly.

How Does Microgreens Crop Planning Work?

Crop Production

The basic principle of microgreens crop planning is based on expected or projected product orders, and working backwards from the desired harvest/delivery date for those orders to determine:

  1. Which crops to grow
  2. How much of each crop to grow
  3. When to soak or sow those crops to ensure they mature on the desired harvest date

A crop’s soaking or sowing date is determined by its days to maturity (DTM). So a crop that you want to mature on Dec 20, which has 10 days to maturity, needs to be sowed on Dec. 10.

How long a crop stays in the germination stage, depends on its Days to Germinate (DTG). A crop that has 5 DTG and is sowed on Dec. 10 will get uncovered on Dec. 15.

When orders contain product mixes, you can use the percent of each crop in the product to calculate how much crop to grow.

Customers and Orders

Crops and products are an important part of microgreens crop planning, but so are customers and orders – without them, there is no need for crops and products.

Your customers can include different types such as grocers, restaurants, farmers markets, wholesalers, and home delivery, to name a few. It is important to keep a database of your current and past customers and to record what “type of customer they are. This can help you break down your sales by customer type to better understand how your sales are distributed.

Orders can be done on a case-by-case basis or as a standing order, which repeats on a regular cycle. Your goal should be to encourage customers to set a standing order to make crop planning easier. Many microgreens growers also operate on a grow-to-order basis, meaning you don’t grow a crop unless there is an order for it. 

The grow-to-order system is useful for ensuring you are optimizing crop production and reducing the likelihood of waste. But this system does not account for growth very well as, in theory, you should never have extra crop. But we can plan for extra crop using “virtual customers” – non-existent customers that you grow crop for that can be used for samples, yield shortfalls. Read more about virtual customers here.


The ultimate goal of all your crop planning efforts are fivefold:

  1. To help map out your season to get a sense of what you crop production might look like
  2. Generate the soaking, sowing, uncovering and harvest tasks for your crop cycles
  3. Generate packing lists for all of your products on a given harvest day
  4. Generate customer delivery lists for all of your orders on a given harvest day 
  5. Generate sales and crop production reports for your season

Having a well-organized task list can save you an incredible amount of time and effort AND ensure you have optimized your crop production cycles.


Being well organized means you can generate accurate reports to summarize your microgreens sales and crop production. This allows you to compare your expected sales and crop production with your actual sales and crop production figures. This can help you accurately adjust your system when needed.
